Garden Veggie Frittata

I'm sorry it has been a while since anything worthwhile was posted, but now that our schedule is back to normal, posting should become more regular. Thanks for your patience!!!!

~Veggie Frittata~
Note: This recipe is to be prepared in a 9 ½ inch oven safe skillet and serves 4-6 people.

* Whisk 6-7 eggs with 1 tbsp. of cream, salt and pepper to taste in a bowl, set aside.
* Add two tablespoons butter or olive oil to pan, saute- 1 medium onion, 1/2 diced green and red bell peppers, to desired tenderness over medium heat(or use any variety of in season veggies) 
*Pour egg mixture over skillet ingredients, continue to cook  until the eggs begin to set around the sides, near done but still undone in center.
* Then place OVEN SAFE SKILLET under broiler for about 3-5 minutes or until middle is set completely, then carefully remove from oven using oven mitt's, cut into wedges, serve with some or all of these garnish ideas: finely chopped green onions, tomatoes, sour cream, grated cheese and guacamole.

Note: this is a great recipe to switch and change around, depending on what you have on hand. Here are some of the things from our garden we have added: rosemary, basil, squash, broccoli, or try potatoes, with turkey bacon, experiment with it and have fun!

  1. think I'll be making this one for just staush and me... Steve doesn't do eggs and Rainee doesn't do veggies that well... but... will let you know when I try it...
